At Julie's shower a couple of weeks ago. Kendra made some amazing cookies. A lot of the women commented on how much they liked them. One even going as far as saying, "I think that's the best thing I've ever put in my mouth." Well, I probably wouldn't go that far but they sure were yummy! I thought I would post the recipe so all three of you who actually read my blog (HaHa) could maybe try them out. Here goes:
Ingredients:
1 C. unsalted butter, softened
1 C. sugar
2 eggs, room temperature
zest of 1 lemon
juice of 1 lemon
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
3 1/4 C. cake flour
1 1/2 C. blueberries
1 Tbsp. poppyseeds
With a paddle mixer, beat butter and sugar until light and fluffy. Add eggs one at a time and beat after each addition. Add lemon zest and juice and beat to incorporate. In seperate bowl whisk together dry ingredients. With mixer on low speed, slowly add dry ingredients to batter. Scrape down the bowl as needed and mix until incorporated. Mix in poppy seeds. Fold in blueberries gently as to not break them. Allow dough to cool in fridge for 1 hour. Use small scoop and place rounded mounds on a cookie sheet lined with parchment paper. Bake at 350 degrees for 11-14 minutes until bottoms are lightly browned. Sides should NOT be browned.
Glaze:
1 C. powdered sugar
2 Tbsp. fresh lemon juice
Combine in bowl and mix well. If too thick, add more juice. If too thin add more sugar. Drizzle over cookies.
This recipe is a little involved but to you I say, "Try it, you'll like it!"

How absolutely WONDERFUL, Janell, to see that you posted this fabulous recipe!! Thank you Thank you! Over the weekend I was talking to Kamber, telling her we were going to have "Dessert Night" Sunday night at our house and I said, "How do you think I could get Kendra's phone number without bothering Janell?" I knew YOU were going to be busy with your up-coming plans and didn't want to bother you, but I was really wanting THIS very recipe!!! (and I knew that Kendra was the one who had made them for the shower...)
ReplyDeleteWe had our "Dessert Night" yesterday and it was really fun, but unfortunately--I didn't check your blog until NOW--Monday morning!! But now that I have the recipe, I'm inclined to go in the kitchen and MAKE these delicacies RIGHT NOW!! :) (I'd better NOT, though--or I'd eat them all MYSELF!!) Thanks so much for the recipe!
